King Lake Farms Ginseng Apple Crumble

Is there anything better than apple picking? The crisp fall air, tart and juicy apples, and the perfect taste of harvest. At King Lake Farms, we have our own apple trees and I love making apple sauce, baking with apples and doing fun “taste tests” between the red and green apples with the kids. So, what better way to incorporate ginseng than into a sweet Apple Crumble?
Serves 6
Ingredients:
10 apples (I use a blend of whatever I have) peeled, cored, sliced
2 tbsp maple syrup
1 tsp lemon juice
1 tsp vanilla extract
¾ cup quick oats
¾ cup all purpose flour
½ cup brown sugar
1 tsp Cinnamon
½ tsp ground ginseng*
Pinch of salt
½ cup cold butter and more for greasing pan
Vanilla ice cream (optional – but so delicious!)
Instructions:
Preheat the oven to 350 degrees F.
Peel, core, slice the apples.
In a mixing bowl, toss apple slices with maple syrup, lemon juice and vanilla extract and place in a buttered baking dish.
In a separate bowl, mix brown sugar, oats, flour, cinnamon, salt and ginseng to create the crumble.
Cut in cold butter to the crumble and roughly mix,
Spread the crumble over the apples and bake for 35-40 minutes.
Serve with a big scoop of vanilla ice cream.

*Ginseng powder is most readily available from the dried root. This root has been thoroughly cleaned (and yes, cleanliness falls under government inspection) and is ready-to-use. Cut off the needed amount and whirl it through the blender until it’s powdery.
